Alchemy is a magical power or process of transmuting a common substance, usually of little or no value, into a substance of great value.
When I ran my restaurant, I experimented with intention a lot. Intention in food preparation is alchemy. Days when I was full of joy, in the moment, the bread would rise just a little higher, the flavours of the soup would pop a little brighter and my customers seemed to be infused with the same blessed energy. I found over the years that I could literally sway the dining experience of my customers with the intention I baked and cooked into their food. Sometimes I’d be distracted or stressed, and on occasion, would cry into the soup – and out of the blue, customers would burst into tears. No kidding.
