Goji Oat Bars
This is a super fast and super simple way to get your super food breakfast in you on the way out the door. Make up a pan in advance and you’ll be good to go for several days. It’s a wonderful, hearty cross between oatmeal porridge and a granola bar.
Goji berries, also known as “wolfberries” have been revered in China for generations for their health-giving qualities. Eat’em up for longevity, or to treat high blood pressure, fever and to balance blood sugar. Gojis are filled with antioxidants, which as we now know can help prevent serious diseases like cancer and heart disease…
Organic oats provide stable whole grain nutrition that’s dispensed evenly throughout the morning and the seeds pack a protein punch.
Here’s how:
2 cups rolled organic oats
1 cup goji berries
1/4 cup each, sunflower, pumpkin, sesame & flax seeds
1/2 - 3/4 cup agave nectar
2 Tbsp tahini
1 tsp vanilla extract
warm water
Soak the oats and goji berries in just enough warm water to be absorbed in 5 minutes (about a cup). Add all ingredients to a bowl and mix together. Consistency should be like thick porridge. Taste and adjust sweetness to your liking. Not too much agave though, as the sweetness will expand in the oven.
Lightly oil a small round pan and pour in oat mixture. Spread with the back of a spoon and bake at 350 for about half an hour or until lightly browned. Allow to cool before cutting into thick wedges. Have these as mid-morning pick-me-ups when your Go Green Smoothie wears off.
