“Cream” of Collard Greens
This is one of my ultimate favorite comforting soups on a cold fall or winter day, and it has also become a fave of some of my clients in my Toronto lunchtime organic vegan soup and smoothie delivery service.
It’s a simple dreamy creamy cleansing vegan soup, made rich and nourishing by blending sweet yams and cashews in with the collards, giving your greens a lovely warm balance – a soup you could sip all day and be entirely sustained by the powerhouse of nutrition it contains.
Dreamy Vegan Oil-Free Cream of Collard Greens
this will make a nice big pot for a family or for you to keep coming back for more:
1 entire bulb garlic, minced
1 onion, diced
1-2 garnet yams, diced
2 big bunches collard greens, sliced into ribbons
1 tsp sea salt
2 tsp apple cider vinegar
1/2 cup cashews
Sautee onions and garlic with sea salt in a splash of water until they sweat and mingle. Add yams and a little more water to cover. Bring to a boil, then turn down to simmer until yams are soft (approximately 20 minutes).
Add collard greens and more water to cover. Turn off the heat, cover with a lid, and let sit for a few more minutes until greens turn deep green and soften.
Blend in small batches in a blender or in the pot with an immersion blender.
Add cashews and a tiny splash of cider vinegar. Blend until smooth and adjust the consistency with more water if you like it thinner. Taste and season with salt and pepper to your liking.

Just made this tonight Moira and it was great! I even added a bit of curry powder I had on hand—-it was so versatile and delish!
